How are restaurants planning for the post-covid era?

At the start of a decisive year for restaurants, Pongo wanted to know how they see the post-covid reboot from the perspective of digital tools. To this end, we produced our first-ever infographic on digital tools for restaurants, with a survey whose main results can be found here. 



Digital tools for restaurants in 20 statistics 


For restaurateurs, 2020 was marked by the need to reinvent themselves and catch up with digital tools(alternative sales channels, customer base, social networks, SMS, etc.). To what extent have they helped limit the damage caused by lost sales, and which ones can be used to revive business? 


This survey was carried out in January and February 2021 by interviewing restaurateurs in our extended network with an online questionnaire. It also incorporates statistical data provided by our partners Zelty, Swile, Tastycloud, Partoo and Tiller.

Survey results 


According to the survey results, 79% of restaurants surveyed tried at least one new sales channel in the year 2020. 

  • 64% have deployed takeaway sales
  • 40% have tried Click & Collect
  • 39% have tried home sales


Clear results can be seen in our partners' data: in the first two quarters, home delivery and takeaway orders rose from 14% to 98% of sales (first containment from March to May 2020). 


Online sales channels generated +239%revenue between January 2020 and January 2021 (partner figures). 


Unsurprisingly, the impact on sales is far from covering the losses caused by the health crisis. 70% of restaurateurs consider the effect of these sales channels to be too limited in relation to normal sales. 


They want to continue to benefit from it: 52% of restaurants that have deployed Click & Collect intend to keep it after the covid crisis. Only 40% intend to do the same with takeaway sales, and 23% with home delivery (delivery platforms). 


Other notable statistics :


  • 74% of restaurants surveyed believe that delivery platforms are a necessary evil. 
  • Customers strongly valued home delivery during successive confinements. Restaurant ratings on Google increased by an average of +5% (partner figures). 


  • 82% of restaurants spend less than €500 a year on digital tools. 
  • 31% plan to step up these investments in 2021. 
  • In 2021, restaurateurs plan to invest in the following tools: 

          Social networking: 67% of sales

          Loyalty: 43% of sales

          Website: 24% of sales

          Cash register software: 19

          Personnel management tool: 10%.

          Control terminal blocks: 5% of the total

          Booking tool: 5% discount


  • 48% of restaurants are convinced that social networks can increase sales.
  • 66% of restaurants surveyed have an Instagram account.
  • Among restaurants with an Instagram account, 75% say they don't use its full potential.
  • More than 1 in 5 restaurants intend to step up their investment in social networks in 2021.


  • Among those who have tried it, 67% of restaurants recommend SMS marketing to boost sales.  
  • 73% of restaurants surveyed have a customer base.
  • 1 restaurant in 5 implemented it during the covid crisis.
  • Among those who have a customer base, 56% are aware that they are not using its full potential to develop sales.
  • What channels do they use to communicate with their customers?

The barometer of digital tools for restaurateurs 2021 by Pongo


This survey on the use of digital tools took the form of an online questionnaire (23 questions) put to restaurateurs contacted directly by Pongo or one of our partners. We would like to thank Zelty, Swile, Tastycloud, Partoo and Tiller for their contribution to this barometer. The margin of error has been reduced by a representative sampling of the geographic origin of respondent restaurants. Responses came from all regions, with 30 departments represented, and an over-representation of the most populous departments (75, 69, 59, 13, 93...).
